Danilo D’Ambra, head chef at Castel Schloss Freundenstein, invites you on a culinary journey. His cuisine blends the best of two worlds: the hearty tradition of Campania and the refined flavours of South Tyrol. For him, it all comes down to one thing – quality you can taste. Seasonal ingredients, creative pairings, and impeccable technique: his dishes surprise, move, and leave a lasting impression.
Egon Heiss, born in the picturesque Sarentino Valley,
ranks among South Tyrol’s most innovative chefs. As the head of the gourmet
restaurant Prezioso at the five-star Castel Fragsburg in Merano, he
has earned both a Michelin star and the prestigious Green Star for
sustainability. His philosophy is all about “the perfection of
simplicity”: a few carefully chosen ingredients, elevated through refined,
modern interpretations of traditional recipes.
