Michelin-starred chef, Restaurant 1908

Stephan Zippl grew up in Lengstein in Renon. He knows the forests and meadows, the fields and farms here like the back of his hand and can thus use the best local products for his dishes. As a career changer, he brings a great deal of down-to-earthness and versatility to his kitchen.

After years of training and working at the Alpin Garden Wellness Resort in Ortisei, the Alpina Dolomites on the SAlpe di Siusi, Villa Feltrinelli on Lake Garda, Restaurant Simon Taxacher in Kirchberg, Tyrol, and Rosa Alpina in San Cassiano under Norbert Niederkofler, Stephan landed in 2015 as Sous-Chef at Parkhotel Holzner. From the very beginning, he was significantly involved in the high gastronomic standards that have since brought numerous awards to the Holzner kitchen and the Restaurant 1908.

In the à-la-carte Restaurant 1908, Stephan Zippl follows his culinary concept Re:vier: The best products from the region serve as his inspiration and basis for his dishes. His sense of flavors, textures, and sensory perception leads to compositions that, true to his philosophy, are characterized by four components: sweet, sour, spicy, and crunchy.
